Peach and mint cake

No, no, I did not bake this. It comes from one of the new local cafés in town. There are a few that have opened these last few months, an Italian one which I will eventually blog about, and two others situated on the high street. They are true independent cafés, not chains, which is great, although I fear they will not last very long, like so many local shops. The one where I had this delicious piece of cake is rather large and bare, like a clean cafeteria, but I absolutely love it because of the quality of its products and because it has inventive desserts. I thought a peach and mint cake was original and summery to go in a cream tea, so I tried it. And it tastes as good as it looks: moist, creamy, just soft enough. By far the best cake I had in months. And the best peaches I had too. Peaches just taste better in a cake.

it's the height of peach season here and we get fabulous peaches locally!
